What kinds of questions would you ask coworkers before you begin working with them and accepting a role? Disclaimer: my role will be in info sec.

Thanks

The Joel Test is a good starting point.

I also try to get a feel for the reactivity of the environment (eg do you use scrum, and if so how often do you bring in unplanned work into the sprint? To what degree are senior management involved in planning process?)

What version control do you use? (and other technical questions).

What are the specs of the computer I would likely use here?

What is a day of work like here, for example what did you work on yesterday and what was that like?

What is your least favorite part about your job, or alternately what is the thing you would say your workplace needs to improve?

What are your 4 favorite parts about your job.

Is it a laid back or busy environment?

How frequently do you need to put in overtime?

        Is there any paid training?

        How are the benefits?

What is the culture like and how monolithic is it?

What is the desk environment like, Office/Open Office/Cubes?

How long do people usually take for lunch? (a sneakier way to ask how busy it is there)

This is a good list, I’d also consider asking a nice open-ended question like “is there anything you think I should know about working here?”. And maybe also “what’s it like working with [whoever your boss would be]?”.
