Since we (at sanity.io) store all mutations sent to our APIs (this is what makes it “real-time”), we had to develop the ability to “forget” to be GDPR compliant. We ended up making a History API for our service in order to comply with GDPR, so in our case, it resulted in a feature that will be great for our users. Our backend engineer gave a technical talk about it. He also wrote a pretty comprehensive introduction for how to run a GDPR-compliant SaaS business.
